Pumpkin Soup, anyone?

People are always asking me for this recipe... so here it is for all who are interested! Thanks to Stacey for sharing it with me years ago... it's a favorite!

Zesty Pumpkin Soup.

Feel free to change any ingredients, or the proportions, as you desire! I don't always make it the same way every time;-)

1/4 C. butter
1 C. chopped onion
1 clove garlic, crushed
1/2 t. curry powder
1/2 t. salt
1/4 t. ground coriander
1/8 t. crushed red pepper
3 C. chicken broth
16 oz. can pumpkin (I use cooked pumpkin and LESS broth if my pumpkin is waterier than the canned stuff, which it usually is. That way the soup is a little thicker.)
1 C half n half (A bit of powdered milk is a cheap substitute AND makes the soup thicker and creamier!)
Sour cream and chives to garnish (optional, though it is yummy)

In a pan melt butter and saute onion and garlic. Add spices and cook one minute. Add broth, pumpkin, half and half and heat till warm. Pour all of it into a blender and blend till creamy! Garnish, and enjoy!
